
Cream of carrot mash
Serves: 6 portions Time: 25 minutes
Ingredients
- 3tbsp red lentils
- 2 medium-sized carrots
- 1 medium-sized potato
- 180ml water
- 3tbsp milk (whole cow’s milk, breast milk or infant formual milk)
- ½tsp ground coriander (optional)
Method
- Wash the lentils in water and drain.
- Wash and peel the carrots and potato, then chop into small, even-sized pieces.
- Put the lentils and water in a saucepan.
- Cover with a lid and bring to the boil.
- When the water boils, add the carrot and potato pieces and reduce the heat.
- Simmer for 10–15 minutes, until soft.
- When soft, remove from the heat and mash with a fork or potato masher.
- Add the milk and coriander and stir to mix.
Divide any leftovers into individual portions and freeze to use later.
