Cream of carrot mash

Serves: 6 portions Time: 25 minutes

Method

  1. Wash the lentils in water and drain.
  2. Wash and peel the carrots and potato, then chop into small, even-sized pieces.
  3. Put the lentils and water in a saucepan.
  4. Cover with a lid and bring to the boil.
  5. When the water boils, add the carrot and potato pieces and reduce the heat.
  6. Simmer for 10–15 minutes, until soft.
  7. When soft, remove from the heat and mash with a fork or potato masher.
  8. Add the milk and coriander and stir to mix.

Divide any leftovers into individual portions and freeze to use later.
